Here’s another, very obvious veg idea:
One of the few things that is truly seasonal still is the GREAT TOMATO. One of the obvious things to do with them, while they last, is: slice em up…slice some fresh mozzarella cheese in tomato-size slices…tear up some leaves of fresh basil…drizzle olive oil and a little vinegar over ’em. Bon appetit! Cannot go wrong. That was my whole lunch today, with a piece of great, multip0grain toast. Yum.
